Recipe - Avocado and Toasted Corn with Cilantro Vinaigrette


Today's recipe is courtesy of Yours Truly Clothing, a line of Gameday clothing and accessories for women (they also have cute tees for kids!)  There will be more to come on YT Clothing soon!

Avocado and Toasted Corn with Cilantro Vinaigrette

5 ears of corn, husk removed and brushed with olive oil, grilled and cut off the cob
2 avocados, chopped and sprinkled with lemon juice to prevent browning
2 cups cherry tomatoes, red and yellow, cut in half
1 large cucumber, diced
1 small red onion, finely diced
1 cup feta cheese, crumbled
 


Combine all ingredients in a large bowl and refrigerate until ready to serve. Next, mix all ingredients for the Cilantro Vinaigrette and refrigerate until ready to serve. Ingredients are:

6 Tbsp good olive oil
2 Tbsp sherry vinegar
1 Tsp garli powder
2 Tbsp fresh cilantro, minced
1/2 Tsp salt
10 grinds of fresh ground pepper
 
Just before serving, mix the Cilantro Vinaigrette into the Avocado and Corn salad.

Frosted Peanut Butter Football Cookies


Super cute and easy football cookies!


Ingredients: 
 
1 pouch Betty Crocker® peanut butter cookie mix
Oil, water and egg called for on cookie pouch mix
1 container Betty Crocker® Rich & Creamy chocolate frosting
1/4 cup creamy peanut butter
1 tube Betty Crocker® white decorating cookie icing 
 Steps: 
 
Make cookie dough as directed on package. Shape dough into 1 1/2–inch balls. Place on ungreased cookie sheets; press each ball into ovals, 1/4–inch thick.

Bake at 375° F 8 to 10 minutes or until light golden brown around edges. Cool; place cookies on cooling racks. Cool completely.

In small bowl, stir chocolate frosting and peanut butter until blended. Spread frosting over cookies; pipe laces with white frosting.
Makes 2 1/2 dozen cookies

Recipe - Buffalo Chicken Dip

10 20 30 Ingredients
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup Louisiana-style hot sauce
  • 1 cup ranch salad dressing
  • 3 cans (4-1/2 ounces each) chunk white chicken, drained and shredded
  • 1 cup (4 ounces) shredded cheddar cheese
  • Corn or tortilla chips
  • Thinly sliced green onions, optional

Directions

  • In a small bowl, combine the cream cheese, hot pepper sauce and salad dressing. Stir in chicken.
  • Spread into an ungreased 11-in. x 7-in. baking dish. Sprinkle with cheddar cheese. Bake, uncovered, at 350° for 20-22 minutes or until heated through. Sprinkle with green onions if desired. Serve with chips. Yield: 5 cups.

Nutrition Facts: 2 tablespoons (calculated without chips) equals 69 calories, 6 g fat (2 g saturated fat), 15 mg cholesterol, 156 mg sodium, 1 g carbohydrate, trace fiber, 3 g protein.

Recipe - Loaded Baked Potato Dip

I found this recipe on Southern Living.  I have not tried it for myself, but anything I can serve with waffle fries is going to be a winner in my book.

Loaded Baked Potato Dip

1 package of fully cooked bacon slices
1 (16 oz) container of sour cream
2 cups freshly shredded cheddar cheese
1/3 cup sliced fresh chives
2 teaspoons of hot sauce

Garnishes: cooked, crumbled bacon; sliced fresh chives; freshly cracked pepper

1. Microwave bacon according to the package directions until crisp; drain on paper towels
2. Cool for ten minutes and crumble
3. Mix bacon with next four ingredients
4. Cover and chill for up to an hour or longer if needed
5. Garnish if desired
6. Serve with crispy, warm waffle fries

Yep! Trying this this weekend.

Recipe - Hot Cheese & Ham Dip


This dip is always a hit.  I made it this past weekend and I do believe it was devoured before kickoff.

Hot Cheese and Ham Dip

1 8oz package of cream cheese
8 oz of sour cream
2 small cans of green chilis 
2 cups of shredded cheddar cheese
1 package of Oscar Mayer deli ham
1/2 cup green onions {diced}
1 tbsp worcestershire sauce {or as much as seen fit}
1 box of Ritz crackers

1. In a large bowl mix together the cream cheese and sour cream
2. Drain the green chilis and add to the mixture
3. Add the cheese, ham, and green onions
4. Dash in the worcestershire sauce
5. Cut a circle in the top of the bread loaf, dig out the bread from the center. {you may want to save the bread for later dipping}
6. Pour in the mixture to the bread bowl. {Don't worry if it overflowing}
8. Heat oven to 375 degrees
9. Cover the top completely with tin foil and place in oven for 30 minutes
10. Remove the tin foil and bake for another 30 minutes

You will have a tangy, cheesy dip for any tailgate or party.  I am a big fan of Ritz crackers with this dip but any chip or cracker does just fin.

Recipe - Football Bites


A simple tailgate treat!


Football Bites (with Summer Sausage, Cheddar & Ranch) Recipe
Ingredients:
Food Ingredients:
  • favorite crackers (I used TownHouse because of their size/shape)
  • summer sausage, sliced thin (about 1/8″ thick)
  • block of cheddar cheese, sliced very thin (about 1/8″ thick)
  • ranch dressing
Prep Tools:
  • 1 small, rinsed-out aluminum can (like from green chiles), or a small round cookie cutter
  • 1 ziplock bag, or frosting bag
Method:
On a sturdy cutting board, use the aluminum can (or cookie cutter) to shape the cheddar and summer sausage pieces into individual “football” shapes.  (See photo above.)  Then assemble the football “bites”, by layering cheddar and summer sausage atop the crackers.
Finally, pour some ranch dressing into a Ziplock bag, and then use scissors to snip a very small triangle from one of the bottom corners.  Pipe the dressing onto the cheddar to complete the football bites.
Then serve and enjoy!

Bourbon and Ginger Spicy Soda

I am a bourbon on Gameday kind of belle.  When I saw this cocktail featured at Garden and Gun, I knew I needed to try it and share it with all of y'all.


Ginger Syrup 
1/2 cup water
1/2 cup sugar
1/4 lb. fresh ginger root {peeled and finely grated}

Bring the water, sugar, and ginger to boil.  Turn of the heat, allow to steep and cool for an hour.  Strain the ginger pieces and reserve the syrup.

To serve
3 oz. Maker's Mark
{any bourbon will do, but this is what I prefer}
1 tbsp. ginger syrup
2 slices of fresh peaches
{pears are a substitute when peaches are not in season}
2 oz. soda water

These proportions are for a 10 oz. glass.  Adjust accordingly.

This cocktail is a nice twist on the standard bourbon and ginger.  It is refreshing and perfect for tailgating.

Recipe - Broccoli Slaw


A great slaw recipe for a tailgate!



Ingredients
  • 1 bag Ramen Noodles in Oriental (reserve seasoning)
  • Pam spray
  • 1/4 cup slivered almonds
  • 2 bags (12-ounce) bags broccoli cole slaw (in the bagged salad section of the grocery store)
  • 1/4 cup sunflower seeds (optional)
Dressing Mix
  • 1/2 cup canola oil
  • 1/4 cup brown or white sugar
  • 1/4 cup apple cider vinegar
  • 1 ramen noodle seasoning packet
Directions

Put the ramen noodles in a bag and crush them with a rolling pin.  Add the crushed noodles and slivered almonds to baking sheet, broil to brown (only 2-4 minutes)  Meanwhile, whisk together all the dressing ingredients in a small bowl.  Place the shredded broccoli into bowl and toss

Recipe - Football Brownies

A sweet treat for your next tailgate!

box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix
1/4
cup water
1/4
cup vegetable oil
2
eggs
Betty Crocker® white decorating icing (from 4.25-oz tube)
  1. Heat oven to 350°F (325°F for dark or nonstick pan). Line 9-inch square pan with foil, letting foil hang 2 inches over sides of pan. Spray foil with cooking spray.
  2. In medium bowl, stir brownie mix, chocolate syrup, oil, water and eggs until well blended. Spread in pan.
  3. Bake 34 to 37 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 1/2 hours.
  4. Using foil to lift, remove brownies from pan. With football-shaped cookie cutter, cut brownies into football shapes. Pipe on decorating icing to look like football laces.
Makes 8 brownies

Recipe - Breakfast Casserole

Who else dreads a noon kickoff?  One, it is so blooming hot.  Two, there is not near enough time to tailgate before the game.  Nevertheless, it means a breakfast spread complete with mimosas and bloody marys.

My last game as collegian was at noon.  We went all out for breakfast by scrambling eggs over the grill with the flat-top attachment.  I wish I had thought of this recipe to make this more simple.

Breakfast Casserole

1 lb. sage pork sausage
1 can crescent rolls
1 lb. Monterey Jack cheese, shredded
5 eggs
3/4 cup milk
2 tsp. minced onions
Pinch of garlic salt

1. Fry and drain sausage
2. Place rolls flat in bottom of 9x13 pan to make crust
3. Crumble sausage, then cheese over dough
4. Mix eggs, milk, onion, and garlic salt in bowl
5. Pour mixture over cheese layer
6. Bake at 350 for 20 to 25 minutes

The bonus for this recipe is that it can be made the night before and refrigerated.  It can be taken straight from the fridge to the oven.  By cutting out all that prep time in the morning, you have more time to stress about getting pretty.

Recipe - Texas Caviar

Texas Caviar is one of the easiest dips to make for tailgate or a party.  And, it is loved by everyone.

Ingredients
1 container of good salsa (not Pace, something with onions & peppers already in it)
1 can of shoepeg white corn
1 can of black beans
1 package of Good Seasons Italian seasoning
1 or 2 bags of Tostitos Scoops 

Directions
Drain and wash the black beans & corn
Mix the salsa, black beans, and corn in a bowl
Mix in the italian seasoning
You can serve immediately or let it sit in the fridge to allow the flavors to mix better.

Enjoy!  I promise it will be a hit.  This is a great dip to keep in mind when you are invited to watch a game and don't have time to make something.  Run by the store and throw it in a bowl when you get there.  It can be adapted to spicier taste buds, if necessary.
