Recipe - Avocado and Toasted Corn with Cilantro Vinaigrette

Avocado and Toasted Corn with Cilantro Vinaigrette

5 ears of corn, husk removed and brushed with olive oil, grilled and cut off the cob
2 avocados, chopped and sprinkled with lemon juice to prevent browning
2 cups cherry tomatoes, red and yellow, cut in half
1 large cucumber, diced
1 small red onion, finely diced
1 cup feta cheese, crumbled
 


Combine all ingredients in a large bowl and refrigerate until ready to serve. Next, mix all ingredients for the Cilantro Vinaigrette and refrigerate until ready to serve. Ingredients are:

6 Tbsp good olive oil
2 Tbsp sherry vinegar
1 Tsp garli powder
2 Tbsp fresh cilantro, minced
1/2 Tsp salt
10 grinds of fresh ground pepper
 
Just before serving, mix the Cilantro Vinaigrette into the Avocado and Corn salad.
