Campus fills up with tailgaters every Saturday.  Any spot on campus is ideal.  Many of the students tailgate in the lots across from the stadium.

Hit Tennessee Street near campus and do the old "Tennessee Waltz," moving from bar to bar down the strip.

A friend of mine in law school attended FSU and this is what she had to say about games...

FSU is a beautiful, truly breathtaking stadium, and I don't think there is any greater place to watch a college football team.  That moment when the band starts playing the War Chant still gives me goosebumps every time I hear it.

I was fortunate enough to attend the South Carolina-Tennessee game this past weekend.  Since I started law school two years ago, I have been inundated with friends from East Tennessee.  They either grew up in the area or attended the University of Tennessee.  A group of us made the trip from Charleston to Knoxville.  Along with the game, we were celebrating three birthdays.  It was a wonderful weekend.

Knoxville is truly a beautiful city nestled on the Tennessee River.  The stadium is located a stone's throw from the river, providing a picturesque backdrop for tailgating.  If the Gamecocks were not playing in Neyland that evening, I probably would have been singing every word of Rocky Top.

Recipe - Avocado and Toasted Corn with Cilantro Vinaigrette

Today's recipe is courtesy of Yours Truly Clothing, a line of Gameday clothing and accessories for women (they also have cute tees for kids!)  There will be more to come on YT Clothing soon!

Avocado and Toasted Corn with Cilantro Vinaigrette

5 ears of corn, husk removed and brushed with olive oil, grilled and cut off the cob
2 avocados, chopped and sprinkled with lemon juice to prevent browning
2 cups cherry tomatoes, red and yellow, cut in half
1 large cucumber, diced
1 small red onion, finely diced
1 cup feta cheese, crumbled

 

Combine all ingredients in a large bowl and refrigerate until ready to serve. Next, mix all ingredients for the Cilantro Vinaigrette and refrigerate until ready to serve. Ingredients are:

6 Tbsp good olive oil
2 Tbsp sherry vinegar
1 Tsp garli powder
2 Tbsp fresh cilantro, minced
1/2 Tsp salt
10 grinds of fresh ground pepper

 

Just before serving, mix the Cilantro Vinaigrette into the Avocado and Corn salad.
